Spring Break

The kids are out for spring break this week. I can already tell I’m going to have to listen to a lot of fussing this week. Jake and Rhiannon are constantly fussing about something. But Trey hasn’t been getting into as much though because Rhiannon entertains him. She is quite the “lil mama” and is always bossing him around. Sometimes he puts up with it and sometimes he doesn’t LOL.

Rhiannon had softball practice last night and I wasn’t too thrilled with that because it rained for about 3 days straight and the field was a mess. All of the girls were muddy after practice. If I had thought about it being that muddy I would have brought a towel for her to sit on so she wouldn’t get my seat dirty. But thankfully, I had a Walmart bag in the car that worked nicely. I hope the field is all dry by her next practice on Friday.

I am thinking about making a Taco Crescent Bake and some Bacon Ranch Green Beans. I got it from this site. Here’s the recipes in case you’d like them.

Taco Crescent Bake

* 1 tube refrigerated crescent rolls
* 2 cups crushed tortilla chips, divided
* 1 lb. taco seasoned ground beef
* 1 container sour cream (8 oz.)
* 1 cup cheddar cheese, shredded (4 oz.)

Cook ground beef and add seasoning according to the recipe below. Unroll crescent dough into a rectangle; press onto the bottom and 1 in. up the sides of a greased 13 in x 9 in x 2 in baking dish. Seal seams and perforations. Sprinkle with 1 cup of crushed chips; set aside. Spoon seasoned ground beef over chips. Top with sour cream, cheese and remaining chips. Bake, uncovered, at 350°F for 25-30 minutes or until crust is lightly browned.

Here’s the recipe for the taco seasoning (I’m not going to use it though, I buy the packets of seasoning)

Taco Seasoning Mix

* 1/4 c dried minced onion
* 1/4 c chili powder
* 3 tbsp salt
* 4 tsp cornstarch
* 1 tbsp dried minced garlic
* 1 tbsp ground cumin
* 1 tbsp crushed red pepper flakes
* 2 tsp beef bouillon granules
* 1 1/2 tsp dried oregano

Combine all ingredients. Store in an airtight container for up to 1 year.

To prepare taco meat: brown ground beef in a skillet, drain. For every pound of ground beef, add 2 tbsp of the mix and 1/3 cup of water. Bring to a boil, then cook and stir for two minutes

Bacon Ranch Green Beans

* 1 package (16 oz) frozen green beans
* 2 tbsp butter or margarine
* 1 envelope ranch salad dressing mix
* 4 bacon strips, cooked and crumbled or bacon bits* (I like Hormel Real Bacon Bits)

In a skillet, saute the green beans in butter. Add the salad dressing mix and toss to coat. Just before serving, sprinkle in the bacon and mix.

softball season….

Rhiannon stopped running fever Thursday night. I kept her home from school Friday just to make sure her fever was completely gone. She was so glad to go back to school Monday :) .
She’s playing softball this year and her first practice was Monday evening for an hour and 20 minutes.. I played for 8 years when I was a kid from the time I was 7 until I was 15. I don’t remember practicing that long but I probably did. I loved softball but I only played summer league. Varsity softball was too intimidating for me. I just felt like I wasn’t good enough, but I never really tried. Rhiannon isn’t as competitive as I am. My cousin’s daughter is on her team and all they wanted to do was talk :D . They were talking so much that they weren’t paying attention. I think they finally separated them. They put one in the field and one up to bat LOL. The one thing Rhiannon did get from me is her talkative nature :D. I had a really nice time talking to my cousin and her sister-in-law during the practice. I am usually at home most of the time, so it was nice to have some adults to talk to. I didn’t get home until around 8:30 and I was tired. I usually get up whenever Will goes to work at about 4:30 am. So I am usually ready to go to bed by 9. Will had supper ready when we got home. He’s pretty awesome like that :D .
